Let me be the first to admit that I’m normally not a big fan of lemon. However, these creamy lemon cookies with essential oil completely changed my mind! These have become a new favorite in our house. They’re just slightly crispy on the outside and chewy and creamy on the inside. You can add as much lemon flavoring to them as you like, so whether you want a faint lemon taste or a strong one – you’re sure to be pleased!
So let’s find out how to make these amazing, creamy lemon cookies!

Start by preheating your oven to 350 degrees.
Now you want to mix 1.5 cups white sugar, 2 eggs, 4 ounces cream cheese, and 3/4 cup butter or margarine. I adore my KitchenAid mixer!
When those have combined nicely, add 1/2 cup powdered sugar, 1 teaspoon baking soda, 1 teaspoon baking powder, 1 teaspoon vanilla, 1/2 teaspoon salt, and 3.5 cups of flour.
After you’ve given that mixture plenty of time to blend well, add anywhere from 15-30 drops of lemon essential oil. {I use this brand.} I wanted that faint hint of lemon in mine, so I added just 15 drops. The lemon flavor in the dough may be stronger than the actual cookies. Start low and go up. You can always add more, but you obviously can’t take any oils out!
Use a scoop to place your cookies on the pan of your choice. (Personally, I love my baking stone because I haven’t burned anything with it!) Make sure the cookies are at least two inches apart.
Cooking times may vary, but plan on 10-15 minutes. Watch for the edges to get slightly golden brown.
You’ll get approximately 3 dozen two-inch cookies.
When Andrew walked in the door after I made these, he immediately grabbed one off the counter.
“Are these lemon?” he asked, as he gobbled down the first cookie.
When I responded yes, hesitantly, because I was unsure of what he thought, he then grabbed another and shoved that in his mouth as well. HA! I guess they were a hit in our house! 😉
